Whipped Feta Spread

All you need are four ingredients for this easy Whipped Feta Spread. This makes a perfect addition to a charcuterie board, or as a dip for fresh veggies.



Weekends are our time to wind down from a busy week. They are meant for sleeping in late, running a few errands, and sometimes doing absolutely nothing. We have no set schedule. Gone are the days of soccer games and dance lessons. No carpool to drive or birthday parties to attend.


Around 5 o'clock, I'll put together a little snack for us to enjoy with a cocktail before going out or before I make dinner. I try to have an assortment of cheese and crackers on hand. Today, I had feta cheese, and it reminded me of the appetizers we enjoyed at some of the American-Greek restaurants back in Chicago. Sadly, we have not found a Greek restaurant that we love here in Scottsdale, Arizona. The ones we have come across have been fast food, and I'm longing for a place where someone is making their grandmothers pastitsio, dolmades, or moussaka in the kitchen.


This recipe for whipped feta spread is simple to make. With basically four ingredients you can't go wrong. A Cuisinart mini-prep food processor helps make this easy too. For a smoother spread, you may want to put the ingredients in a blender.


Break up an 8-ounce block of feta cheese and measure 1/4 cup of whipped cream cheese and put it in your food processor. I like to use the whipped cream cheese because it is soft and airy, and combines with the feta better. If using regular cream cheese, I recommend leaving it out until room temperature. This way it will be softer to work with.


The fourth ingredient is up to you. Use oregano, crushed red pepper, or any other seasoning blend that you like. Remember, feta is salty already, so you don't want to add another spice blend that has a lot of salt in it. Add about 1/2 a teaspoon of seasoning. I used a spicy sun-dried tomato seasoning that I had. Blend the cheeses and seasoning together until they have started to combine. Add some olive oil and process until smooth. It comes together pretty quickly.


Enjoy this delicious spread with bread, crackers, or sliced cucumbers, carrots, roasted beets, or whatever you like. Also, this is a perfect spread for a Mediterranean charcuterie board. I hope you try this recipe. Until next time, friends xo!


Whipped Feta Spread


Ingredients

8 ounces feta cheese, preferably block

1/4 cup whipped cream cheese (If using regular, leave out to room temperature)

Olive oil, about 3 tablespoons, or more if necessary

1/2 teaspoon of your favorite seasoning blend, or oregano


Method

Break up feta cheese and add to food processor or blender. Add 1/4 cup whipped cream cheese and seasoning. Pulse processor or blender to break up large chunks and start combining mixture. With processor or blender running, slowly add olive oil until the spread is smooth.
