Lemon Tea Cookies

These lemon-scented cookies go perfectly with coffee, tea, or if you need a little sweet treat in the middle of the day.



My mom was not much of a baker, but she had a few go-to recipes when she did. Such as these Lemon Tea Cookies. They are light, not too sweet, and have a hint of lemon flavor.



It has been years since I’ve had them. She would make them in case a neighbor or friend stopped by. Those were the days when you didn’t call someone to find out if they were home. Friends or relatives just stopped by because they were in the neighborhood. My how times have changed. If my doorbell rings, I pretend I’m not home. I mean, who would just come over without calling first?! We have become a little less neighborly and more paranoid about why someone would be at our door. How sad. I am glad I grew up during the 60s and 70s. It was completely a different time.

Lemon Tea Cookies


1 1/2 cups of flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup sugar

Lemon zest from a medium-sized lemon

Juice from 1/2 the lemon

1 teaspoon vanilla

1/2 vegetable oil

1 egg


Powdered sugar for rolling cookie dough in and for decorating after cookies have baked


Pre-heat oven to 375 degrees. Cover a cookie sheet with parchment paper. Combine flour, baking soda, lemon zest, and salt in a medium-sized bowl. In a separate bowl, combine sugar, oil, vanilla extract, lemon juice, and egg. Mix thoroughly together until a dough forms.


Use a small scoop to measure out cookies. Roll into a ball, then roll in powdered sugar.


Place on prepared cookie sheet. Makes 15 cookies—Bake for 15 minutes.
