Summer salads are refreshingly tasty! This naturally sweet watermelon salad has juicy green grapes, a mix of arugula and baby spinach, with a lime and mint vinaigrette. A delightful combination of flavors to cool you off this summer.
Record temperatures continue in Arizona with more days in triple digits than ever before! We had 34 days of temperatures over 110 degrees. So, you can understand why I don't want to use the oven. We have had more salads this summer because it is too hot to cook. I tweaked a popular summer salad with watermelon and arugula and added sweet, tart green grapes, and a lime and mint vinaigrette. Super refreshing on a sweltering hot day!
This salad is straight forward to make, and you can certainly make any substitutions to this to fit your tastes. But I would say the combination of the lime-mint vinaigrette with the watermelon and grapes that is the star of this salad. Stay cool!

Fresh Watermelon and Arugula Salad with Lime-Mint Vinaigrette
Serves 2
2 cups, cubed seedless watermelon
4 cups, arugula, or combination of arugula and baby spinach
1/2 cup green grapes, cut in half
2 ounces, crumbled honey goat cheese (Trader Joe's), or regular if you can't find
Lime-Mint Vinaigrette:
1 1/2 tablespoons fresh lime juice
1 1/2 tablespoons light flavored olive oil or canola oil
1 teaspoon honey
1/8 teaspoon Kosher salt 2 large mint leaves, chopped
Arrange arugula (or baby spinach, or combo) on a platter, or divide among two salad plates. Add cubed watermelon, grapes, and goat cheese. In a small jar with a lid, add the ingredients for the vinaigrette. Shake until combined—drizzle vinaigrette over salad.
Vinaigrette can be made a day in advance.
